Zucchini Relish

Grind and mix together the following:

10 cups of Zucchini

4 cups of onions

2 green peppers

Add 5 Tbls. Pickling salt and let stand overnight.

Drain. Rinse with cold water. Drain again.

Add:

2-1/2 cups white vinegar

4-1/2 cups sugar

1 Tbls. Nutmeg

1 Tbls. Dry mustard

1 Tbls. Turmeric

1 Tbls. Cornstarch

½ tsp. Pepper

2 tsp. Celery salt

Simmer for 30 minutes. Put in sterile jars. Process 10 minutes.

Makes 7 pints
